Orange vegetable soup

1-2 large onions cut into medium pieces

5 carrots

3 sweet potatoes

3 cups pumpkin cubes


4 cloves of garlic

2 inches ginger root cut into small cubes





(Cut all the vegetables to make it easier to grind the soup at the end )



Heat olive oil in a pot

Fry the onion until transparent

Add garlic, carrots, sweet potatoes, pumpkin and ginger and fry for a few (

Add water to cover vegetables

Spice and bring to a boil

Cook about 40 minutes to an hour

Grind with a blender (I used a stick blender)
